My kids (4 wonderful, grown women) asked me to put this recipe on the website for them. I didn't realise how much of a favourite it was from their childhood. I hope you enjoy it too.
Lesley's Coffee Chocolate Button Cookies

This is a delicious soft coffee cookie with a chocolate button centre. It's easy to make, especially if you have a cake mixer or food processor. If you don't have either of those, I recommend changing the sugar to castor sugar, and doing your best to beat the ingredients well.
Ingredients:
- 1 Tbsp boiling water
- 1 to 2 Tbsp coffee granules
- 1 tsp vanilla essence
- 250g butter
- 1 cup sugar
- 2 egg yolks
- 2 1/2 cups flour
- 2 tsp baking powder

- Preheat the oven to 160C (320F). Line an oven tray with baking paper.
- Dissolve the coffee granules and vanilla essence in the boiling water. Choose 1 Tbsp of coffee granules if you prefer a delicate coffee flavour, or 2 Tbsp if you like a coffee taste that is more intense. Set aside to cool.
- Soften the chopped up butter in the microwave for about 20 secs, or until soft but not melting. Beat the butter and sugar in a cake mixer until the colour lightens and the mix is creamy (rather than grainy).
- Beat in the egg yolks, then the dissolved coffee mix.
- Sift the flour and baking powder together, and add to the mix. Beat or stir together just until mixed. The mix should feel soft but not overly sticky.
- Roll heaped teaspoonfuls of the mixture into smooth balls, and place on the baking tray.
- Press a chocolate button firmly onto the top of each cookie.
- Bake at 160C for 20 minutes.
- Cool the biscuits on the tray for 2-3 mins, then transfer to a cooling rack.
- Once cool, keep in an airtight container. And enjoy!!!
